Pumpkin Cookies
Preheat oven to 350°F. In a large bowl, beat the butter flavored palm shortening and sugar with an electric mixer, until light and fluffy. Add the baking powder, baking soda, salt, cinnamon, and nutmeg. Beat until combined. Beat in the eggs, vanilla, and pumpkin. Add in the flour. Mix until the batter is well combined and thick. Drop by the tablespoon onto baking sheets 2 inches apart. Bake for 12-14 minutes or until the tops are set and firm. Move to a wire rack to cool.
In a large bowl beat together the butter flavored palm shortening and brown sugar, until it becomes light and fluffy. Add in the remaining ingredients, beating until it is smooth and creamy. Frost the cooled cookies.
